Cheese quesadillas with a tomato & avocado salsa


  • Gently combine the tomatoes, spring onions, avocado, lemon juice, oil, salt and ground pepper. Taste for seasoning. 
  • Spray a tortilla with oil and top with cheese.
  • Then spray the edges with a little more oil, top with another tortilla and fry on both sides in a lightly oiled pan until golden brown.  Repeat the process with the remaining tortillas.
  • When ready, cut the quesadillas into wedges and serve with a spoonful of the salsa on top.


  • ½ punnet cherry tomatoes, halved
  • 2 spring (green) onions, sliced
  • 1 avocado, peeled & sliced
  • juice of 1 lemon
  • a good slurp of olive oil
  • sea salt & freshly ground pepper
  • 4 flour tortillas
  • grated tasty cheese
  • olive oil spray
