Pork on a stick


  • Preheat oven to 180°-200°C fan forced (200°-220°C normal).
  • Soak 4 large wooden skewers in cold water for about 30 mins. 
  • Then thread the skewers with the pork, chipolatas, lemon, bay leaves and cubed bread.
  • Place the skewers in 1-2 lightly oiled baking trays. 
  • Sprinkle with the rosemary, seasonings and a generous amount of oil. Then cook in the oven for about 10-12 mins, turning once. 
  • At the same time, blanch the beans in plenty of lightly salted, boiling water until crisp-tender. Drain well and then toss with a little oil and seasonings. 
  • To serve, arrange the beans on individual plates and top with a skewer.


  • 2-3 pork fillets, trimmed of all fat & sinew & cut into even chunks 
  • 12 chipolatas
  • 3 lemons, cut into quarters
  • 12 fresh bay leaves
  • 12 cubes of firm sourdough bread
  • olive oil spray
  • 3 tbsp chopped fresh rosemary
  • sea salt & freshly ground pepper
  • olive oil
  • 16-20 small green beans, topped & tailed
