Grilled radicchio with prosciutto & parmesan


  • Clean the radicchio, trim and cut into wedges.
  • Then brush the radicchio with a little oil, season and grill until charred around the edges, brushing with more oil as you do so. 
  • To serve, place the radicchio on individual plates, drape prosciutto over the top, sprinkle with a little fresh oil and balsamic, and scatter parmesan over.


  • 2 heads of radicchio
  • olive oil
  • sea salt & freshly ground pepper
  • 8 slices prosciutto
  • balsamic vinegar
  • freshly grated or shaved parmesan
