Watermelon, feta & black olive salad

Method

  • To make the dressing, whisk the spices with the sugar, olive oil, vinegar, salt and pepper. Taste for seasoning and set aside. 
  • In another bowl, toss the watermelon, olives, rocket and feta with dressing to taste. 
  • Serve with a little more dressing drizzled on top.

Ingredients

  • ½ tspn ground cardamom
  • ½ tspn ground cinnamon
  • ½ tspn cumin seeds
  • ½ tspn fennel seeds
  • 1 tspn sugar
  • ¾ cup olive oil
  • ¼ cup sherry (or red wine) vinegar
  • sea salt & freshly ground pepper
  • 4 cups cubed, seedless watermelon
  • 8 pitted black olives, quartered
  • a good handful of rocket (or any other bitter leaves)
  • ½ cup cubed feta cheese
