Colombian fried eggs


  • Heat a little oil in a heavy-bottomed non-stick pan and fry the eggs. 
  • When almost ready, add the chilli, garlic and cumin seeds to the pan.
  • Toast the bread (or grill sprayed with a little oil). 
  • To serve, top the toast with the eggs and sprinkle with a little fresh oil and balsamic.

  • 1-2 thick slices sourdough bread
  • olive oil spray
  • a splash of balsamic vinegar
