Salt crusted rib of beef with pesto beans


  • Preheat a ridged grill (or BBQ). 
  • Spray the steaks with a little oil, sprinkle with ground pepper and cook over a high heat until well sealed on both sides.
  • Then place the steaks on a bed of salt and set aside for 12-15 mins, turning now and again. 
  • When ready, cook the steaks to the desired degree, brushing with oil and lemon juice as you do so. 
  • At the same time, cook the beans in plenty of lightly salted, boiling water until al dente. Drain well and toss with a little oil, and pesto and parmesan to taste. 
  • Serve the steaks sprinkled with lemon juice and a little fresh oil with the beans on the side.
  • nb. The steaks could be served with your favourite potato dish, if you prefer.
