Tuna & bean salad


  • Whisk the lemon juice and garlic with the oil, salt and pepper. Taste for seasoning. 
  • Put the spring onions, cannelini beans, tuna, rocket and parsley in another bowl and gently toss with the dressing to taste. 
  • Serve with good crusty bread on the side.


  • juice of 1 lemon
  • 1-2 garlic cloves, crushed
  • ¼ cup olive oil
  • sea salt & freshly ground pepper
  • 2-3 spring (green) onions, finely chopped
  • 1 can cannelini beans, drained & rinsed
  • 1 large can tuna, drained & flaked
  • a good handful of rocket leaves, washed & drained
  • 2 tbsp chopped fresh parsley
