Smoked salmon Carbonara

Method

  • Cook the pasta in plenty of lightly salted, boiling water until al dente.
  • While the pasta is cooking, heat the oil and butter in a large heavy-bottomed pan and gently saute the garlic until lightly coloured. Transfer to a large bowl and add the cream, parsley, salt, a decent amount of ground pepper, the parmesan and eggs. Whisk until well combined.
  • Then add the drained pasta to the bowl and toss well.
  • To serve, mound the pasta in individual flat soup bowls, arrange a generous amount of salmon on top and sprinkled with more parmesan if you like.

  • 400 gm spaghetti (or similar pasta)
  • sea salt & freshly ground pepper
  • olive oil
  • 2 tbsp butter
  • 1 garlic clove, crushed
  • 2 tbsp cream
  • 1 heaped tbsp chopped fresh parsley
  • ½ cup freshly grated parmesan
  • 3 large eggs
  • sliced smoked salmon, cut into strips
