Chicken 'pizzas'


  • Preheat oven to 200°-220°C fan forced (220°-240°C normal).
  • Cut the chicken breasts in half lengthways. Then neaten up and gently batten out between a piece of kitchen plastic wrap.
  • Lightly oil a baking sheet and place the chicken on top. Then spread tomato cooking sauce over and top with the mushrooms, salami, olives and anchovies. Sprinkle with cheese and cook on the top shelf of the oven for about 10-12 mins until golden and bubbling.
  • Serve with your favourite salad on the side.


  • 2 skinless chicken breast fillets

  • Italian tomato cooking sauce
  • 4 button mushrooms, finely sliced & sautéed
  • 4-6 slices salami, halved
  • 6 pitted black olives, sliced
  • 12 anchovies grated tasty cheese
  • freshly grated parmesan
