Eggplant & cheese Croque Monsieur


  • Preheat overhead grill to the highest degree.
  • Remove the stem from the eggplant and prick all over with a fork. Then microwave on high for about 4-5 mins until it collapses. When cool enough to handle, peel and roughly chop.
  • Whiz up the eggplant in a food processor. Then add both cheeses with the parsley, seasonings and egg. Process until well combined and taste for seasoning. 
  • Generously smear one side of 3 slices of bread with the cheese mixture. Top with the remaining bread and cut off the crusts. Then spray  both sides with oil, cut in half, place on an oven tray and grill until golden.


  • 1 large eggplant
  • 50 gm tasty cheese, grated
  • 50 gm feta, crumbled
  • 2 tbsp chopped fresh parsley
  • sea salt & freshly ground pepper
  • 1 egg
  • 6 slices white toast bread
  • olive oil spray
