Oven roasted mushrooms with goat's cheese bruschetta

Method

  • Preheat oven to 180°-190°C fan forced (200°-210°C normal).
  • Place the mushrooms on a large baking tray, peeled side down. Sprinkle with garlic, a little oil and seasonings to taste. Then cook in the oven until tender.
  • Cut the baguette into 8 slices on the diagonal and lightly spray with oil. Then grill and smear goat's cheese on top.
  • To serve, place the mushrooms on individual plates, arrange the baguette on top and sprinkle with a little fresh oil and the parsley.

  • 8 field mushrooms, peeled & stalks removed
  • crushed garlic
  • olive oil
  • sea salt & freshly ground pepper
  • 1 baguette
  • olive oil spray
  • soft goat's cheese
  • 2 tbsp chopped fresh parsley
