Dirty rice, bean & cheese bake


  • Place the rice, spice mix, stock, capsicums, kidney beans and tomatoes in a large bowl. Mix well, cover and cook in the microwave on 100% for 7 mins. Then stir, cover and cook for about another 7 mins until the rice is tender. Taste for seasoning.
  • Preheat the overhead grill to highest degree.
  • Then transfer the rice into a gratin dish (or casserole). Smooth the top, scatter a good layer of cheese on top and grill until golden and bubbling.
  • Serve with a simple green salad on the side.


  • just over 1½ cups Basmati (long grain) rice

  • 2¾ cups vegetable stock
  • ½  jar chargrilled capsicums, drained
  • 1 x 400 gm can red kidney beans, drained & rinsed
  • 1 x 400 gm can diced tomatoes
  • sea salt
  • grated tasty cheese
