Sausages with sweet mustard onions


  • Blanch the sausages in simmering water until reasonably firmish when squeezed. Then drain well.
  • Heat a little oil in a heavy-bottomed non-stick pan and gently saute the onions until softened. Then add 1 heaped tbsp mustard, the brown sugar, cider and seasonings. Mix well and cook until thick and fragrant. Taste for seasoning.
  • While the onions are cooking, heat a thin layer of fresh oil in a large pan and cook the sausages.
  • Spoon a bed of onions on individual plates, top with the sausages and serve with a good dollop of mustard on the side. 
  • nb. If you prefer, the sausages can be cooked on a BBQ or ridged grill.

  • olive oil
  • 3 large onions, finely sliced
  • Dijon mustard
  • 1 tbsp brown sugar
  • 100 ml dry apple cider
  • sea salt & freshly ground pepper
