Strawberry Daiquiri syllabub

Method

  • Coarsely mash the strawberries with 1-2 tbsp caster sugar and 3 tbsp Bacardi. Taste for sweetness and set aside.
  • In another bowl, beat the cream with the grated rind and juice of 1 lime, 50 gm caster sugar and the remaining Bacardi until thick. Also taste for sweetness.
  • To serve, rub fresh lime around the edges of 4 glasses and dip in caster sugar. Then spoon the mashed strawberries in the bases and top with the syllabub. Garnish with extra strawberries and a little lime zest.

  • 450 gm+ ripe strawberries, hulled & quartered
  • caster sugar
  • 6 tbsp Bacardi (or any other white rum)
  • 275 ml thickened cream
  • 2 limes
