Sweet 'n' sour ribs

Method

  • Preheat oven to 220°C fan forced (240°C normal).
  • To make the sauce, heat a little oil in a pan and gently saute the onion, garlic and ginger until tender. Add the lime juice, pineapple juice, fish sauce, honey, sambel, sweet chilli sauce, ketchup and soy sauce. Mix well, turn the heat down and simmer until thick and fragrant.
  • Then place the slabs in a large heavy-bottomed oven tray, generously brush with the sauce and cook in the oven for about 30-40 mins, brushing with more sauce as you do so.
  • Serve with finger bowls and plenty of serviettes on the side!

  • 1 heaped tspn grated fresh ginger
  • 4 tbsp fresh lime juice
  • ½ cup pineapple juice
  • 2 tbsp Asian fish sauce
  • 2 tbsp honey
  • 1 tbsp sambel oelek (or any chilli paste)
  • 2 tbsp sweet chilli sauce
  • 4 tbsp tomato ketchup
  • a good splash or two of soy sauce
  • slabs of baby back pork ribs
