Baked spiced fish


  • Preheat oven to 180°C fan forced (200°C normal).
  • Score the fish in a diamond pattern on one side and place on a large sheet of lightly oiled foil.  Then scatter the chillies, garlic, lemon juice and zest, seasonings, butter and coriander over the fish. Loosely fold up the foil and cook in the lower part of the oven for about 15 mins (checking if ready by making a cut behind the head).
  • Serve the fish with a simple green salad on the side.


  • 1 whole baby plate-size fish, skin removed
  • olive oil spray
  • 2 small red chillies, seeded & finely sliced
  • 1-2 garlic cloves, crushed
  • juice & grated rind of 1 lemon
  • sea salt & freshly ground pepper
  • a few dollops of butter
  • 1-2 tbsp chopped fresh coriander
