Smoked eel with watermelon & apple salad

Method

  • Heavily reduce the balsamic in a heavy-bottomed to form a syrup.
  • Then toss the apple with the lettuce leaves.
  • Arrange the watermelon slices in a square or circle pattern on individual plates. Place the smoked eel on top and then the apple and lettuce mixture. Drizzle the balsamic glaze around the plate edges and serve.

Ingredients

  • balsamic vinegar
  • 1 Granny Smith apple, peeled & sliced
  • 1 handful baby lettuce leaves
  • watermelon slices, rind removed & seeded
  • smoked eel (or other smoked fish - not salmon), cut into pieces 
  • a splash of olive oil
