Antony's gorgeous carrot patties


  • Cut 5 carrots into chunks and boil until tender. Then drain well, mash and set aside. 
  • Grate the remaining carrots and mix with the dried apricots, sultanas, 2 finely chopped spring onions, the chilli flakes, mint, dill, orange zest, bread, seasonings and 1 egg until well combined (adding extra crumbs or egg, if needed) in a large bowl.
  • Form the mixture into patties with lightly oiled hands. Then lightly flour and panfry in a thin layer of hot oil, before draining on kitchen paper towels.
  • Combine the yoghurt and coriander with the remaining spring onion.
  • Serve the patties with the yoghurt in a small bowl on the side.


  • 10 medium carrots, peeled
  • 6 dried apricots, finely chopped
  • 1 tbsp sultanas, chopped
  • 3 spring (green) onions, finely chopped
  • 1 tspn chilli flakes
  • 3 tbsp chopped fresh mint
  • 3 tbsp chopped fresh dill
  • 2 tspn grated orange rind
  • 2 slices wholegrain bread, crusts removed & crumbled
  • sea salt & freshly ground pepper
  • 1-2 large eggs
  • cooking oil spray
  • plain flour
  • vegetable oil
  • 3 heaped tbsp low fat yoghurt
  • 2 tbsp chopped fresh coriander
