Scallops & black pudding with apple sauce


  • To make the apple sauce, put the diced apples, lemon juice, brown sugar and a little water into a heavy-bottomed pot and gently cook until tender, adding more water if needed. Taste for sweetening.
  • At the same time, cook the black pudding until crispy on a lightly oiled preheated flat grill (or panfry and drain well). Remove.
  • Then very briefly sear the scallops on both sides on the flat grill.
  • To serve, arrange the black pudding on small individual plates, top with scallops and spoon the apple sauce over.


  • 4-5 Granny Smith apples, peeled, cored & diced
  • juice of ½ lemon
  • 1-2 tspn brown sugar
  • olive oil spray
  • 1 black pudding, finely sliced
  • 8-12 scallops
  • mini herbs
