  • Boil the potatoes and swedes in lightly salted boiling water until tender. Drain well. Then add a knob of butter and coarsely mash and taste for seasoning.
  • Fry the spring onions in a little more butter and add to the mash. Mix well and serve as an accompaniment with your favourite meat dish.
