Sweet banana bruschetta


  • Melt the butter in a large pan and fry the bananas until they begin to colour.
  • Then add the golden syrup and rum with the orange juice and zest. Toss and cook to reduce to a glaze.
  • At the same time, grill (or toast) the bread and place on individual plates.
  • Spoon the banana mixture on the toast and serve with a dollop of whipped cream on top.


  • a good dollop of unsalted butter
  • 3 bananas, cut into chunks
  • 1 tbsp golden syrup
  • a good slurp of rum
  • juice & grated rind of ½ orange
  • 4 thick slices fruit bread
  • whipped cream
