Pizza tart


  • Preheat oven to 180°C fan forced (200°C normal).
  • Place the tomatoes in an oven tray, cut side up. Then sprinkle with oil and seasonings, and cook in the oven for 15-20 mins until they collapse. Drain well.
  • Heat a little oil in a heavy-bottomed pan and gently saute the mushrooms and onion until softish.
  • Cut the pastry sheets into large rounds and place on lightly oiled baking trays. Then arrange the tomatoes in a round on the pastry, leaving an edge, and top with the salami, sautéed mushrooms, anchovies and olives, and scatter quite a bit of cheese on top.
  • Combine the egg and milk. Then brush around the pastry edges with the egg wash and cook in the oven for about 15 mins until golden brown.
  • Serve as is as a snack or with a simple green salad on the side as a light lunch.
