Croquetas de Pollo


  • To make the béchamel, gently melt the butter in a large heavy-bottomed pot. Then add 90 gm flour and continually stir with a wooden spoon until well combined. Add the dry sherry and continue stirring until absorbed. Then add the hot stock and whisk well. Remove from the heat and add 125 ml milk with the bay leaves and cream. Whisk well, return to the heat and cook for 8-10 mins until smooth and the mixture pulls away from the sides, stirring now and again with a wooden spoon. Remove the bay leaves and transfer to a large bowl.
  • At the same time, heat 2 tbsp oil in a heavy-bottomed pan and gently saute the prosciutto, celery and leek until tender.  Then add the chicken mince with seasonings and the parsley, and continually mash until cooked through.
  • Add the mixture to the béchamel sauce and mix well. Allow to cool, then cover with clingwrap and refrigerate for about 3 hours until set.
  • When ready, place about 2 cups flour in one bowl, the eggs mixed with ¼ cup milk in another, and the breadcrumbs mixed with ground almonds in a third one.
  • Divide the chicken mixture into 24 and form small long croquettes.
  • Heat 6 cups oil to 180°-190°C in a deep fryer, large heavy-bottomed pot or wok.
  • Flour the croquettes, dip in the egg wash and then crumb. Re-form them, deep fry and drain well on kitchen paper towels. 
  • Combine the paprika with 1 tbsp salt.
  • Serve the croquettes with the paprika salt and lemon wedges on the side.

  • 2 tspn smoked paprika
  • 1-2 lemons, cut in wedges
