Lemony salmon cutlets in the microwave


  • Place the salmon in a microwave-proof dish, in one layer.
  • Mix the lemon juice with the olive oil, seasonings and parsley. Then pour over the salmon, loosely cover with plastic wrap and cook on high in the microwave for 2-3 mins. Remove and set aside for another 2-3 mins, before removing the plastic.
  • Serve with your favourite vegie dish on the side.


  • 2 even-sized salmon cutlets, pinboned
  • juice of 1 lemon
  • ¼ cup olive oil
  • sea salt & freshly ground pepper
  • 1 tspn chopped fresh parsley
