Steamed Simnel pudding


  • Whiz up the flour, caster sugar, softened butter, egg yolk and eggs in a food processor until smooth
  • Then transfer the mixture to a large mixing bowl and add the marzipan, mixed peel, glace cherries, currants and sultanas. Mix until well combined using a wooden spoon.
  • Lightly butter and flour a pudding bowl. Pour in the batter, even out the top and cover with plastic wrap. Then pierce once with the tip of a sharp knife and cook on high in the microwave for 6-7 mins until a skewer comes out clean. (Check after 6 mins.)
