Sausage & vegie 'pie'

Method

  • Preheat oven to 160°C fan forced (180°C normal).
  • Heat a little oil in a large heavy-bottomed pan and gently saute the onion, apple, carrot and potato for about 10 mins until fairly tender, stirring now and again.
  • Then transfer the sautéed vegies to a bowl with the sausage meat, eggs, seasonings and chutney. Mix well and spoon into an oiled baking tray (or tin).
  • Sprinkle cheese over the top and cook in the oven for about 30 mins, until firmish in the centre when pressed. Allow to cool, before slicing and serving hot or cold with a simple green salad on the side.

  • 1 large potato, diced
  • 500 gm sausage meat
  • 2 eggs
  • sea salt & freshly ground pepper
  • 3 tbsp tomato chutney (or tomato sauce)
  • olive oil spray
  • grated tasty cheese
