Banana puffs


  • Preheat oven to 200°C fan forced (220°C normal).
  • Place a banana half on a pastry sheet and cut around leaving a border. Repeat the process with the remaining banana.
  • Make an egg wash by combining the egg and milk.
  • Then transfer the pastry, with bananas on top, to a lightly oiled baking tray. Brush the pastry edges with egg wash, generously sprinkle the bananas with brown sugar and cook in the oven for about 15-20 mins until caramelised.
  • Serve with a dollop of cream or ice cream on the side.


  • 4 small bananas, peeled & halved lengthways
  • 2 puff pastry sheets

  • ¼ cup milk

  • thickened cream or ice cream
