Lesley's microwave chocolate pots

Method

  • Combine the sugar, mascarpone, Dutch cocoa, vanilla, self-raising flour and eggs using a hand mixer.
  • Divide the mixture between 4 ramekins and loosely cover with plastic wrap. Then cook, 2 at a time, in the microwave on high for 1 min 15 secs. Allow to stand for 2 mins, before removing the plastic.
  • Serve with a dollop of cream and a sprinkling of icing sugar on top.

  • 25 gm Dutch cocoa
  • 1 tspn vanilla essence
  • 40 gm self-raising flour
  • 2 eggs
  • thick cream
  • icing sugar
