Brocollini with pinenuts

Method

  • Place the brocollini in a microwave dish. then add a little water, cover with plastic wrap and cook in the microwave on high for about 3 mins. Drain well.
  • To make the sauce, melt the butter in a pan and gently cook the pinenuts with seasonings until golden.
  • Serve the brocollini with the browned butter spooned over the top as an accompaniment to a simple meat or fish dish.

Ingredients

  • 1 large bunch brocollini, cut into florets with some stalk & peeled
  • a large knob of butter
  • 2 heaped tbsp pinenuts
  • sea salt & freshly ground pepper
