Somerset apple cake

Method

  • Preheat oven to 160°C fan forced (180°C normal).
  • Soak the sultanas in the apple cider for 30 mins. 
  • Beat the caster sugar and butter until well combined using a hand mixer. Add the eggs, one at a time, beating between each addition. Then fold in the flour, baking powder, cinnamon and lemon zest using a wooden spoon. Add the sliced apples with the sultanas and cider. Gently mix until well combined. 
  • Spray a springform cake tin with oil, spoon in the mixture and cook in the oven for 45-50 mins until a skewer comes out clean. Allow to cool in the tin on a rack.  Then dust with icing sugar, slice and serve with a good dollop of cream on the side.

  • 150 ml dry apple cider
  • 225 gm caster sugar
  • 170 gm unsalted butter
  • 2 large eggs
  • 285 gm plain flour
  • 1½ tspn baking powder
  • 1 tspn ground cinnamon
  • grated rind of 1 lemon
  • 2 large Granny Smith apples, peeled, cored & finely sliced
  • cooking oil spray
  • icing sugar
  • good quality thick cream
