Prosciutto & cheese Frittaco


  • Beat the eggs with the cream, Tabasco and 1 tbsp chopped parsley.
  • Heat a thin layer of oil in a non-stick pan and briefly cook the egg mixture, bringing the soft curds into the centre and then not touching. 
  • Then place one layer of prosciutto in the centre on top and sprinkle with Gruyere. Carefully fold over and place on a large plate.
  • Drizzle the chilli sauce over the top and serve sprinkled with a little more parsley.

  • chopped fresh Italian (flat leaf) parsley
  • olive oil
  • 4 slices slices prosciutto
  • grated Gruyere
  • Asian sweet chilli sauce
