Carnival cupcakes


  • Preheat oven to 170°C fan forced (190°C normal).
  • Beat 125 gm butter with the caster sugar and 1 tspn vanilla essence in a large bowl until light and creamy.
  • Then add eggs, one at a time, continually mixing.
  • Sift the flour and baking powder into the mixture, and carefully fold in with a wooden spoon.
  • Then add the milk and continue mixing.
  • Place 12 patty cases in 1-2 large muffin tins and cook in the middle of the oven for about 12-16 mins until golden. When ready, allow to cool on a rack.
  • Beat the remaining butter and vanilla with the icing sugar and cream on low speed until smooth. Then separate the mixture into small bowls and mix in a few drops of the food colourings. 
  • Smear the various icings on top of the cupcakes and sprinkle with hundred & thousands.
