Barbecued wings


  • Soak 12 wooden skewers in cold water for an hour. Then pierce through the chicken wings lengthways.
  • Whisk the spring onions and chillies with the vinegar and seasonings. Set aside.
  • Place the skewers on a preheated oiled BBQ crossways and slip foil underneath the sticks (not the chicken). Then cook for about 15 mins, continually brushing with the mopping sauce and basting with the BBQ sauce only after about 12 mins.
  • Serve with your favourite salad alongside.


  • 12 chicken wings
  • 4 spring (green) onions, finely chopped
  • 2 small red chillies, finely chopped
  • 1 cup white wine vinegar
  • sea salt & freshly ground pepper
  • olive oil
