Pasta with ham & tomato

Method

  • Heat the oil in a large heavy-bottomed pan and gently saute the onion and garlic until softish. Then add the tomatoes with the stock, tomato cooking sauce, sugar and seasonings. Mix well and cook until thick and fragrant, adding the ham towards the end. Stir in the basil and taste for seasoning.
  • At the same time, cook the pasta in lightly salted boiling water until al dente. Drain well and toss through the sauce.
  • Serve in individual flat soup bowls with parmesan sprinkled on top.

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 1 garlic clove, crushed
  • 3 cans diced tomatoes
  • 1 cup chicken stock
  • ¼-½ cup Italian tomato cooking sauce
  • a good pinch of brown sugar
  • sea salt & freshly ground pepper
  • 4-6 slices ham, shredded
  • 6-8 basil leaves, sliced
  • 400 gm your favourite pasta
  • grated parmesan
