Pumpkin, spinach & 3 cheese lasagne

Method

  • Preheat oven to 200°C fan forced (220°C normal).
  • Toss the pumpkin with enough oil and seasonings in an oven tray to coat well. Then cook in the oven for about 20-30 mins until tender and a little caramelised. Set aside and mash a little when cool.
  • To make the mornay sauce, melt 100 gm butter in a heavy-bottomed pot. Then add the flour and gently cook, continually whisking. Add the hot milk all at once, stir well and then add the cream with a handful of tasty cheese and seasonings.
  • At the same time, combine the ricotta, eggs and pecorino with a little ground pepper using a fork.
  • Then melt a good knob of butter with a little oil in a wok (or large non-stick pan). Add the garlic, spinach and seasonings, and cook until just wilted, stirring with a wooden spoon as you do so. Drain well in a colander.
  • Lower the oven temp. to 160°C fan forced (180°C normal). 
  • Layer a gratin dish (or casserole) with mornay sauce, the tomato cooking sauce and lasagne sheets. Then top with more mornay sauce, the pumpkin, spinach, ricotta mixture and lasagne, finishing with a good layer of mornay sauce, a little tomato cooking sauce and a good layer of tasty cheese. Cook in the middle of the oven for 35-40 mins until golden brown and tender when pierced with a small knife.
  • nb. If using a deep dish, more layers of lasagne sheets can be used.

  • 400 gm spinach leaves, washed well & stalks removed
  • Italian tomato cooking sauce
  • lasagne sheets
  • 2 cups grated tasty cheese
