Sugared almond cakes


  • Preheat oven to 150°C fan forced (170°C normal).
  • Beat the butter until pale in a large bowl, using a hand mixer. Gradually add the caster sugar, little by little, continually mixing. Then add the eggs, one at a time, continually beating.
  • Fold in the ground almonds to the mixture and then the flour, using a wooden spoon. Add the vanilla, mix well and spoon into buttered muffin trays. Cook in the oven for 12-15 mins until risen and golden brown. 
  • Allow to cool on a rack before generously dusting with caster sugar.
