Chocolate & Coca Cola cake


  • Preheat oven to 150°C fan forced (170°C normal).
  • Slowly melt 200 gm butter and 250 ml Coca Cola in a heavy-bottomed over a low heat.
  • Then sift flour, 3 tbsp cocoa and the bicarb into a large bowl. Add the golden caster sugar and stir until well combined.
  • Combine the eggs, milk and vanilla extract in another bowl. Then add this to the dry ingredients, little by little, alternating with the Coca Cola mixture and stirring between each addition.
  • Brush a springform cake tin all over with melted butter and then pour in the cake mixture. Cook in the oven for about 40 mins on the middle shelf until a skewer comes out clean. Remove and put on a rack for 10 mins. When ready, remove the sides and allow the cake to cool on the base.
  • To make the icing, slowly melt the remaining butter with the cocoa and Coca Cola in a pot. Then mix with the icing sugar until well combined.
  • Pour the icing over the cake, smooth the top and serve when cooled a little.
