Microwave chicken with Asian flavours

Method

  • Place the onion, capsicum, celery and chicken in a microwave-proof bowl. Add a little soy, oyster sauce, hoisin and sambel. Toss well, cover with plastic wrap and pierce a few times with a fork. Then cook in the microwave on 100% for 4 mins.
  • Add the bok choy with a little more soy to the bowl. Re-cover, pierce again and cook for about another 5 mins.
  • Serve on steamed rice in individual bowls garnished with spring onion.

Ingredients

  • 1 red onion, cut into chunks
  • 1 red capsicum, seeded, ribs removed & cut into chunks
  • 1 celery stalk, cut into chunks
  • 2 skinless chicken breasts, cut into chunks
  • soy sauce
  • a good splash of oyster sauce
  • a good splash of hoisin sauce
  • 1 tspn sambel oelek (or any other chilli paste)
  • a good handful of baby bok choy leaves, cut in half if need be 
  • 2-3 spring (green) onions, sliced
