Pork medallions with mandarin & soy


  • Whisk the garlic, mandarin juice and dry sherry with 2 tbsp oil, the soy, honey and peppercorns.
  • Pour the marinade over the pork steaks, toss until well coated and refrigerate for at least 2 hours (or overnight).
  • When ready, heat a little vegie oil in a heavy-bottomed pan and cook the pork on both sides, adding the marinade little by little as you do so. Remove the pork when ready and reduce the marinade to sauce consistency.
  • Stirfry the snowpeas in a little oil until crisp-tender.
  • To serve, place the snowpeas on individual plates, top with the pork, spoon the sauce over and garnish with spring onion.
