Rustic apple tarts


  • Preheat oven to 180°C fan forced (200°C normal).
  • Melt the butter in a large pan and gently cook the apples until golden, tossing now and again and adding a little water if needed.
  • Remove the pan from the heat and add ¼ cup caster sugar with the flour and honey. Mix well and set aside to cool a little. 
  • When ready, lightly oil an oven tray and place a pastry round on top.
  • Whisk the egg with the milk.
  • Then mound the apple mixture in the centre of each pastry round and brush the edges with the egg wash. Fold the pastry inwards, leaving a hole in the centre and brush again with egg wash. Repeat the process with the remaining pastry and apple mixture.
  • Sprinkle each tart with a little caster sugar and cook high up in the oven for about 15 mins until golden brown and risen. 
  • Serve the tarts with a spoon of whipped cream or ice cream on top.
