Breadfruit soup


  • Heat the oil in a large saute pan (or heavy-bottomed pot) and gently saute the onion, bacon and carrot until softish. Then add 1 litre stock with the breadfruit and seasonings. Mix well and cook for about 20 mins until soft, adding more stock if needed. 
  • When ready, add the cream and parsley. Mix well, taste for seasoning and serve.


  • 1-2 tbsp olive oil
  • 1 large onion, chopped
  • 2-3 rindless bacon rashers, diced
  • 1 medium carrot, diced
  • 1½ litres chicken (or vegetable) stock
  • 2-3 cups washed, peeled & diced unripe breadfruit
  • sea salt & freshly ground pepper
  • a slurp of cream (optional)
  • 1 heaped tbsp chopped fresh parsley
