Chicken Cacciatore


  • Preheat oven to 180°C fan forced (200°C normal).
  • Gently toss the tomatoes, mushrooms, onion and garlic with seasonings and a little oil until well coated. Then place in a large, heavy-bottomed oven tray and cook in the oven for about 45 mins until tender and the tomatoes have collapsed, tossing now and again.
  • When ready, peel and chop the tomatoes and garlic. Then toss with the field mushrooms and onion. Set aside.
  • Soak the porcinis in warm water for about 20-30 mins. Drain well, reserving a little of the liquid.
  • Heat a thin layer of oil in a saute pan (or large, heavy-bottomed non-stick pan) and cook the chicken in one layer, covered, skin side down first, until golden brown all over.
  • Add the wine and seasonings. Mix well and reduce, uncovered.
  • Then add the stock, cover, turn the heat down and gently cook for about 20 mins until the chicken is tender, turning once or twice.
  • When ready, remove the chicken and add the porcinis with a little soaking liquid, together with the roasted vegies. Mix well and continue to cook for a few minutes.
  • Return the chicken with any juices to the pan, together with the capers and 1 tbsp parsley. Toss and taste the sauce for seasoning.
  • When almost ready, cook the pasta in plenty of lightly salted, boiling water until al dente. Drain well.
  • To serve, mound the pasta in individual flat soup bowls, top with the chicken, spoon sauce over the top and garnish with a little parsley.

  • ¼ cup dry white wine
  • 1 cup chicken stock
  • 1 tbsp capers, rinsed & drained
  • 2-3 tbsp chopped Italian (flat leaf) parsley
  • 300-400 gm fettuccine (or any pasta)
