Steamed baby fish with crackling dressing


  • Slash a diamond pattern in the flesh of the fish and place on a plate that can fit in the steamer.
  • Scatter the chillies, ginger and garlic over the fish, cover and steam. When the fish is almost ready, add the vegies and briefly cook until they just wilt.
  • Arrange the vegies on a large plate and top with the fish. Then sprinkle with soy and spring onions.
  • To make the dressing, heat the peanut and sesame oils in a non-stick pan until smoking. Then pour over the fish and serve with steamed rice alongside.


  • 1 baby fish (that can fit in your steamer)
  • 2 small red chillies, seeded & finely sliced
  • a knob of ginger, julienned (or grated if not very young)
  • 1 garlic clove, finely sliced
  • Asian greens, prepared
  • soy sauce
  • 3-4 spring (green) onions, green part only shredded
  • 2 tbsp peanut oil
  • 2 tspn sesame oil
