Lemon & herb marinated calamari


  • Clean and slice the squid into rings and place in a large bowl. 
  • Then whisk the oil and lemon juice with the garlic, seasonings, mustard and parsley.
  • Pour half the liquid over the squid (reserving the rest), toss well, cover with clingwrap and refrigerate for 30-60 mins.
  • When ready, heat a wok (or large non-stick pan) to very hot and briefly toss the calamari until cooked. Taste for seasoning.
  • Gently toss the calamari with the lettuce and the reserved dressing to taste.


  • 3-4 squid or calamari tubes
  • ½ cup olive oil
  • juice of 1 lemon
  • 2 large garlic cloves, crushed
  • sea salt & freshly ground pepper
  • 1 tspn Dijon mustard
  • 2 tbsp chopped fresh parsley
  • 2 handfuls frisee lettuce (or another hearty lettuce or spinach)
