Udon noodle hot pot


  • Soak the shiitakes in warm water for 30 mins. Then discard the stalks and cut the caps into 4.
  • Place the stock, soy, garlic, sugar, sambel and sesame oil in a heavy-bottomed pot. Whisk up, bring to the boil and taste for seasoning.
  • Soak the noodles in boiling water until separated.
  • At the same time, blanch the broccoli, carrots, shiitakes, wonga bok and bok choy in boiling water until crisp-tender. Drain very well.
  • To serve, mound the noodles in individual bowls, top with the vegies and pour the stock over the lot.


  • 8 shiitake mushrooms
  • 1 litre vegetable stock
  • 2-3 tbsp soy sauce
  • 2 garlic cloves, crushed
  • 1 heaped tspn sugar
  • 1 heaped tspn sambel oelek (or any other chilli paste)
  • a few drops sesame oil
  • 1-2 packets udon noodles
  • 1 cup broccoli florets
  • 4-6 baby carrots, sliced
  • ¼ wonga bok, shredded
  • 2 baby bok choy, halved
