Mushroom Rarebit


  • Preheat oven to 190°C fan forced (210°C normal).
  • Place the mushrooms in an oven tray (stem sides up) and sprinkle with oil and seasonings. Then cook in the oven until tender.
  • Gently bring the milk and flour to the boil in a pot, continually whisking. Then add the mustard powder, Worcestershire, cheese, breadcrumbs, Guinness and ground pepper. Mix well with a wooden spoon until the cheese has melted. Turn the heat off, add the egg with the egg yolk and beat vigorously.
  • Then spoon a generous amount of the cheese sauce onto the mushrooms and grill until golden and bubbling.

  • 8 large field mushrooms, peeled

  • 1 heaped tspn good mustard powder
  • 1 tbsp Worcestershire sauce
  • 400 gm grated tasty cheese
  • 165 gm fresh breadcrumbs
  • 120 ml Guinness
  • 1 egg + 1 egg yolk
