Fig, prosciutto & mascarpone tart

Method

  • Preheat oven to 160°C fan forced (180°C normal).
  • Lightly oil a baking sheet, place the pastry on top and score a border around the edge.
  • Then spread a thin layer of mascarpone on the pastry within the border. Lay the prosciutto on top and then the figs, overlapping slightly. Season and sprinkle with a little balsamic.
  • Combine the egg and milk and brush the pastry border with the egg wash. Then cook in the oven for about 15-20 mins until the pastry has risen and the figs are golden.
  • Serve with a simple green salad on the side.

  • 1 frozen puff pastry sheet
  • 1 small tub mascarpone
  • 8-12 slices prosciutto
  • 6 figs, sliced
  • sea salt & freshly ground pepper
  • balsamic vinegar
  • 1 egg
  • ¼ cup milk
