Sweet potato, mushroom & couscous parcels


  • Preheat oven to 200°-210°C fan forced (220°-230°C normal).
  • Boil the potatoes until reasonably tender. Then drain well, cool a little and roughly mash.
  • At the same time, hardboil 2 eggs. Allow to cool, chop and set aside.
  • In a large heavy-bottomed pot, bring the stock with the carrot, celery, raisins and ¼ tspn harissa to the boil.
  • Place the couscous in a large bowl, pour the boiling stock over, stir and leave for about 5 mins. Then fluff up with a fork. 
  • Heat a little oil in a pan and gently saute the onion and garlic until tender. Then add to the sweet potato mash with the walnuts, chopped eggs and 3 tbsp chopped coriander.
  • Add a little fresh oil to the pan and gently saute the mushrooms until any juices have evaporated. Then add to the couscous with the mash and toss well.
  • In another bowl, combine the yoghurt and lemon juice with the remaining coriander and 1-2 heaped tspn harissa. Taste for seasoning and set aside.
  • Place a pastry sheet on a lightly oiled baking tray.
  • Beat the remaining egg with the milk.
  • Then mound the sweet potato mixture in the centre of the pastry (not too high), brush the edges with the egg wash and fold up into a parcel. Then brush the top with egg wash and cook in the oven for 10-12 mins until golden brown and puffed.
  • Repeat the process with the remaining mixture and pastry. 
  • Serve with the harissa yoghurt sprinkled on top and a simple green salad on the side, if you like.

  • a squeeze of lemon juice
  • cooking oil spray
  • 4 puff pastry sheets
  • ¼ cup milk
