Baby turnips with bacon & apple cider


  • Peel the turnips and, depending on size, either leave whole or halve.
  • Heat the oil in a large heavy-bottomed pan and briefly saute the bacon over a fairly high heat. Add the turnips, mix well and saute, covered, for about 5 mins, tossing every now and again. 
  • Then add the cider, brown sugar, butter and seasonings to the pan. Toss, cover again, turn the heat down and gently cook for 15-20 mins until the turnips are tender and a glaze is formed, adding more cider if needed.
  • Serve as an accompaniment to your favourite simple meat dish.


  • 1 kg baby turnips
  • 1 tbsp olive oil
  • 4 rindless bacon rashers, diced (optional)
  • 1+ cups apple cider
  • ½ tspn brown sugar
  • a good knob of butter (optional)
  • sea salt & freshly ground pepper
  • chopped Italian (flat leaf) parsley
