Ham, leek, egg & cheese pies
Method
- Preheat oven to 170°C-180°C fan forced (190°-200°C normal).
- Heat the oil in a heavy-bottomed pan and gently saute the leeks until tender.
- Cut the ham into rounds and place in deep muffin trays. Top with the leek, gently pressing down, and then carefully break the eggs on top.
- Sprinkle with a little cream, ground pepper and both cheeses. Then cook in the oven for about 12 mins until the eggs are just set.
- Leave in muffin tray for about 5 mins before unmoulding and serving hot or cold.
